Jelly is the product obtained by concentrating the pulp or fruit juice with adequate amounts of sugar, pectin and acid to a sufficient concentration for gelling to occur during cooling.

Popular in Brazil, the origin of the jelly is uncertain. There are those who believe that making fruit compotes was the way the Arabs found to preserve food for longer. The intention was to use the jellies for medicinal purposes, as the fruits are able to help in the treatment of various diseases.
